This is a dessert from the series “only cats are faster...”, or, as we say, “chik chuk, ve-zeu”! Indeed, everything about everything, from the sudden decision to cook to “I ask for the table - it’s boiling,” takes 5-6 minutes, no more. Well, isn’t this a sufficient argument to have such a recipe in your active stock?! And what if we make it even worse by the fact that the sponge cake turns out not only fast, but also extremely tasty?! And if we also emphasize that anyone can handle its preparation without any questions... and a child too?! And also serving options... with ice cream, with cream, with nuts, with berries, with jam, with syrup, with powdered sugar, with cocoa powder... but all this is an additional taste and each time a different shade to your cake! What about the serve? For me, this is very impressive... everyone has their own cute glass of biscuit... elegant, tasty, not troublesome and original!

Strawberry Vanilla Cupcake with Buttercream Frosting, Microwaved

Strawberry Vanilla Cupcake with Buttercream Frosting, Microwaved

  • 1 tablespoon butter, softened;
  • 1 large egg;
  • 1/2 teaspoon vanillin;
  • 2 tablespoons granulated sugar;
  • 1/4 cup flour;
  • 1 teaspoon baking powder;
  • 1/2 teaspoon cinnamon;
  • 2-3 tablespoons strawberries, diced (you can use frozen).
  1. In a medium bowl, combine all ingredients (except strawberries) and whisk until the dough is smooth and free of lumps.
  2. Carefully add strawberries.
  3. Grease the mug with oil and pour about 2/3 of the finished dough into it (so that the dough does not leak out when it rises). It’s even better to distribute the dough among two mugs so that it only takes up half the volume.
  4. Place the mug with the dough in the microwave and keep it on high for 75 to 90 seconds or until done. The best way to control the cooking process is directly in front of the microwave. Since everyone’s microwave is different, for some the cake may be ready in 60 seconds, for others this process may take 2 minutes.
  5. When the cake is ready, remove it from the microwave and let it cool.

Meanwhile, make the glaze:

  • 1 tablespoon butter, melted;
  • 1/4 cup powdered sugar;
  • 1/4 teaspoon vanillin;
  • 1 tablespoon cream (or milk).

Combine all ingredients (except cream) in a small bowl and beat to desired consistency. The thickness of the cream can be reduced by adding cream or milk.

Pour frosting over the top of the cupcake in a mug until it is saturated with it. Or carefully remove the cupcake from the mug (to do this, you need to run a knife along the sides of the cupcake, thereby separating them from the walls of the mug), turn it over onto a plate and pour creamy glaze on top.

Orange chocolate cupcake

This fragrant orange-chocolate cake is very easy to prepare. For 4 cupcakes you will need:

  • 8 tablespoons butter;
  • 1 cup powdered sugar;
  • 1 teaspoon grated zest;
  • 0.25 cups orange juice;
  • 2 cups of flour;
  • 0.5 cups cocoa powder;
  • 2 eggs.

Glaze:

  • 1 cup powdered sugar;
  • 200 gr. milk chocolate;
  • 0.5 cups orange juice.

Let's prepare four mugs or baking molds that can be placed in the microwave oven. Grease them with some butter. Place the rest of the butter in a bowl and wait until it becomes completely soft. Beat the butter with the addition of powdered sugar until fluffy.

Add orange juice and orange zest, beat in the eggs, and continue beating the mixture until it becomes completely homogeneous. Mix flour with cocoa powder, sift this mixture and add it to the liquid part of the dough. Stir until all lumps disappear.

Pour the dough into mugs, filling them 2/3 full. We prepare the cupcakes one at a time. It will take 2-3 minutes to bake 1 cupcake at a power of 800 W. Place the finished cupcakes on plates.

Break the milk chocolate into small pieces, place in a glass bowl and melt in the microwave. Place the chocolate in the oven, turn on the “defrost” mode for 30 seconds, then take out the bowl and stir thoroughly. Then warm up again for 30 seconds. We continue to do this until the chocolate is completely melted. Let the chocolate cool, mix it with orange juice and powdered sugar. Stir until smooth. Cover our cupcakes with the prepared glaze.
