New Year's Lenten dish “Baked peppers”

What do you need:

  • Sweet bell pepper – 2 pieces
  • Tomatoes – 2 pieces
  • Pitted olives
  • Garlic – 2 cloves
  • Greenery
  • Pepper
  • Salt

How to cook:

Peel the pepper and cut in half. Boil the tomatoes for one minute, remove the skin and chop finely. Chop the remaining ingredients the same way. Season everything with pepper, pour over vegetable oil. Place in the oven for 45 minutes at 180 degrees.

4. Stuff the peppers with stewed cabbage and place them in a saucepan or saucepan while standing (in a circle).

5. Pour the sauce over the peppers and simmer until done.

1. Boil the potatoes in salted water until tender and mash them.

4. Fill with hot water at a ratio of 2:1 to bulgur.

5. Cover with a lid and simmer over low heat for 20-25 minutes.

6. After this time, let it brew for 30 minutes.

What do you need:

  • Octopus and squid – 250 g each
  • Tomatoes – 3 pcs.
  • Green onions
  • Green olives – 100 g
  • Capers (salted buds) - 2 tbsp. l.

For refueling:

  • Olive oil
  • Lemon juice
  • Salt
  • Pepper

How to cook:

  1. Boil the octopus and squid in salted water for 50 minutes, after cleaning them. Then dry and finely chop.
  2. Chop all other ingredients and mix.
  3. In a separate bowl, prepare the dressing, mix 4 tablespoons juice, 3 tablespoons olive oil, salt and pepper.
  4. Then mix with the main mass.

The salad is ready to serve.

Lenten salads for the New Year's table

What would New Year be without salads? We will choose Lenten New Year's salad recipes from vegetables, legumes, herbs, and fruits. Options with fish, seafood, crackers, and cereals are suitable.

For dressing we use various vegetable oils, sauces and even lean mayonnaise, which is easy to prepare from boiled beans, whipped with butter, mustard and spices. There are a lot of ideas for lean New Year's salads, and any favorite snack can be made lean by adjusting the list of ingredients.

Beetroot salad with herring

This is a simple salad with the taste of childhood. The combination of herring and beets is originally Russian, but simply forgotten by many. Although everyone loves classic salads like fur coats, they clog the natural taste with fatty mayonnaise dressings.

Try making a lean beet salad with beets. You will definitely like it and will become a frequent guest not only on the New Year’s table.

We will need:

  • large beets – 2 pcs.;
  • herring fillet – 150 gr.;
  • onion – ½ piece;
  • table vinegar - 3 tbsp. l.
  • water – 24 tbsp. l.;
  • dill – 1 bunch;
  • salt - to taste;
  • vegetable oil – 2 tbsp. l.

Boil or bake beets in foil. Cut the ready-made beets into small cubes.

To make the beets tastier, it is better to bake them, adding a little cinnamon and 2 coriander peas.

Pour vinegar into the water and dip the onion, cut into half rings, into the mixture, where it will sit for 10 minutes.

Wash the dill and chop finely. Remove the small seeds from the herring and cut into cubes.

In a salad bowl, combine beets with herring and pickled onions. Season the dish with vegetable oil and sprinkle prepared dill on top.

This is where all the tricks end. All that remains is to put the delicious beet salad on the table. If desired, you can add parsley and cilantro as decoration. Replace sunflower oil with aromatic nut or flaxseed oil.

Three cabbage salad

Many people consider dishes with cabbage banal and everyday. Skeptics' opinions change when they try the original Three Cabbage Salad.

This unusual combination of different flavors is highlighted by orange. The dish plays with bright colors and just begs to be served on the festive New Year's table.

We will need:

  • white cabbage – 160 gr.;
  • red cabbage – 160 gr.;
  • Chinese cabbage – 160 g;
  • rice vinegar – 1 tsp;
  • soy sauce – 1 tbsp. l.;
  • vegetable oil – 15 g;
  • orange – 1 pc.;
  • purple onion – 1 pc.;
  • garlic – 1 clove;
  • honey - 1 tbsp. l.;
  • greens – 1 handful.

Chop all three types of cabbage thinly. Cut the red onion into four parts and cut each into thin half rings.

Wash the orange and cut into 4 parts. Squeeze the juice from one into a bowl. We clean the remaining three parts and cut them into fairly large cubes.

Pour vegetable oil into a bowl. Add soy sauce, honey and orange juice there.

Mix all the ingredients of the sauce thoroughly.

Pour onion and finely chopped garlic into the prepared sauce. Add a good amount of chopped dill to the main ingredients of the sauce.

Mix the dressing and leave to marinate in the cold for 10 minutes.

Let's start putting together the salad. Mix all three types of shredded cabbage and place in a heap on a dish.

Pour the dressing over the cabbage and arrange the orange slices beautifully on top.

A beautiful and unusual cabbage salad with oranges is ready. If you want to add oriental notes to the salad, you can sprinkle sesame seeds fried in a dry frying pan on top. And don't forget about New Year's.

Salmon roll

What do you need:

  • Salmon fillet – 400 grams

For filling:

  • Canned green peas – 150 grams
  • Carrots - 1 pc.
  • Agar-agar – 1 teaspoon
  • Yeast-free lean bread – 150 grams
  • Greens, salt, pepper to taste

How to cook:

  1. Boil the carrots, finely chop the greens.
  2. Soak the lean bread in water and add the swollen agar-agar. Add green peas, carrots and herbs to the bread mixture. Mix everything.
  3. Cut the salmon fillet into thin slices.
  4. Spread the vegetable mixture onto the fillet and form into a roll.
  5. Wrap the roll in foil and bake in the oven at 180 degrees. Cooking time: 40 minutes.

Cut the finished roll into slices, the New Year's Lenten dish is ready.

Lenten dish for the New Year “Jellied vegetables”

What do you need:

  • Canned green peas – 300 grams
  • Carrots – 300 grams
  • Green beans – 100 grams
  • Agar-agar – 50 grams
  • Spices pepper, salt, lemon juice.

How to cook:

  1. Boil the carrots. Drain excess liquid from canned peas.
  2. Dilute agar-agar in water according to instructions and add to vegetable broth. Add salt, pepper and a little lemon juice here.
  3. Place finely chopped vegetables in a portion form and pour prepared agar-agar over them.
  4. Afterwards you need to put the aspic in the refrigerator until it hardens completely.

New Year's Lenten dish "Berry Cake"

What do you need:

  • Dark chocolate – 150 grams
  • Gelatin or agar-agar
  • Hulled seeds – 70 grams
  • Fresh berries – 1 kilogram
  • Air flakes – 30 grams

How to cook:

  1. Mix chocolate, previously melted in a water bath, with seeds and air flakes.
  2. Line a baking dish with cling film and pour the prepared mixture.
  3. Flatten the mixture, press down and refrigerate for 40 minutes until hardened.

No, it’s worth rummaging through your memory (and cookbooks), and such recipes will definitely come to mind. It’s just that before, until you fasted, you didn’t think about whether you were preparing lean food or not.
