The harvest at the dacha is almost ready, and the forest is full of mushrooms! We prefer to freeze these gifts of nature: first boil them in salted water, put them in bags and put them in the freezer. Simple, fast and useful. This year we collected especially many mushrooms, so we had to learn a new method of harvesting - pickling. To my shame, I admit that in my 30s I have never pickled mushrooms. But our grandmothers know a lot about this - their pickled mushrooms My husband and I asked Baba Tanya in detail how to marinate mushrooms with vinegar. The recipe for a mushroom marinade with 9% vinegar turned out to be extremely simple. We decided to describe all the secrets and mistakes in this article. We are sure it will be useful to both readers and ourselves next year.

Recipe for mushroom marinade with vinegar 9%

For 3 kg of boiled mushrooms (1 liter is about 1 kg, but it’s better to weigh it) we take:

  • 1 liter of water;
  • 3 tbsp. small heaped tablespoons of salt;
  • 4 teaspoons granulated sugar;
  • 15-20 black peppercorns;
  • 8-10 cloves;
  • 5 bay leaves;
  • 6 - 7 tbsp. spoons of 9% table vinegar.

Preparation: Pour cold water (regular from the tap) into a saucepan, add salt, sugar, peppercorns, cloves and bay leaf. Once it boils, add the boiled mushrooms and cook for 15 minutes after boiling, stirring.

During cooking, it is worth covering the pan with a lid so that the water does not evaporate. At the end of cooking, pour in 9% vinegar, stir and turn off the heat. Place hot mushrooms in sterilized jars and secure with sterilized lids. We used screw ones - they are very easy to tighten. According to this recipe, we ended up with 6 half-liter jars of pickled mushrooms.

How long does it take to sterilize jars and lids? Half-liter and liter jars are sterilized for 10 minutes, 1.5-liter jars for 15 minutes, three-liter jars for 30 minutes. Once the jar has been sterilized, grab the bottom with a towel, remove it and place it on the table (neck up). The jars are sterilized before marinating.

How long does it take to sterilize lids? 3 minutes is enough (boil all the lids together). It is convenient to sterilize the lids during the last minutes of cooking the mushrooms in the marinade. We take the lids out of the water while they are hot, when the mushrooms have already been placed in the jars. It’s easy to remove the lid with a fork, place it on a clean plate, and let the water drain for literally 1 second. Place the HOT lid on the jar of mushrooms and screw it on. Then turn the jar upside down and place it on a clean towel. Once the jars have cooled down, you can put them away in the cellar.

When to add vinegar to marinade? It was surprising to learn that every housewife here has her own secrets: some put vinegar at the beginning of pickling, others at the end, and others directly into the jars. We chose the second option - at the end of marinating, before turning off the heat
