Recipe for “Sunday Lavash Pie”:

First, let's prepare the fillings, there will be two of them. Mushrooms, if fresh, boil and chop, if salted or pickled, rinse them with water and chop, I have a third option - boiled, sliced and frozen, I simply defrost them and squeeze out excess moisture. Mix mushrooms with chopped tomatoes and finely chopped herbs, this will be our first filling

Add finely chopped onion to the minced meat, add a little salt and pepper and mix

Now you can start assembling the pie. Grease the springform pan with butter

Cut the lavash sheet lengthwise into two halves, place the minced meat on the edges (not all of it, less than half)

Roll up

Place the rolls in the mold, thus trim off the excess and use it in the next ring with minced meat.

We make the same rolls with mushroom filling

Place it in a ring on top of the minced meat rolls, but not too tightly

Next, alternating rings with fillings, fill out the entire form

Prepare the filling: mix sour cream, eggs and cheese, grated on a coarse grater.

Fill the pie, trying to fill all the gaps between the rolls, and place in an oven preheated to 200-220 degrees. Cook until golden brown for about 35-40 minutes, it all depends on your oven.

How to fold shawarma correctly?

How to properly wrap shawarma in pita bread? First of all, it must be at least 25 cm in diameter. If it is smaller, it will be difficult for you to screw the product properly. Make sure the pita bread you use is soft. If you take it straight from the package or refrigerator, it's best to warm it quickly in the microwave or in a dry frying pan before using it. This will allow the pita bread to become elastic so you can wrap it around the filling without tearing.

Place a small amount of filling (overfilling can ruin the dish) in a line, leaving more than half of the pita free on top and about 5cm on each side at the sides.

Fold the sides together so they are almost touching, but not completely. There should be a distance of a couple of centimeters between them so that some of the filling still peeks out. Hold the folded sides with your fingers and gently lift the bottom edge of the pita bread. Make one turn over the filling, then twist tightly once or twice until all ingredients are well sealed.

Now that you've learned how to wrap pita bread with shawarma filling, you can get creative and experiment with sauces and toppings.

Which pita bread should you take?

To fill pita bread at home with some of the ingredients available in the refrigerator, you must immediately select the correct main ingredient. Lavash comes in different varieties: Armenian is thin, often rectangular in shape, and Georgian is more fluffy, round. Tortilla, an unleavened bread in the form of a flatbread, is a close relative of pita bread from Mexico, and the Indian flatbread chapati is the same pita bread, only fried in a dry frying pan.

To prepare various rolls, rolls, pies and snacks based on lavash, Armenian lavash is usually used, and what to fill it with and how to do it correctly is described below. It is worth noting that you need to buy pita bread as fresh as possible and store it tightly packed until you start cooking, since it dries out very quickly in the air and when rolled into a roll it begins to break and crumble.

Do not forget that if the filling in lavash is quite soft and generously flavored with sauces, such a dish is served immediately or no later than ten minutes after preparation, otherwise the dough will become soggy and tear. If the appetizer was prepared for yourself, it’s awkward to eat, but not scary, and if it’s a holiday dish, it will be extremely awkward in front of guests.

If the filling contains a lot of greens: Chinese cabbage, sweet pepper or parsley, such options can retain their integrity longer, which means they are convenient to take on the road, as a snack for work or school, or on a picnic. Lavash stuffed with meat, sausage and cheese is very convenient to take to places where there is a microwave - to warm up a snack.

Shawarma in the form of a square

In order for such a dish to turn out successful at home, it is not enough just to prepare delicious ingredients. You need to know how to properly wrap shawarma:

  • Let's prepare thin pita bread and hot sauce.
  • Divide the cake into 2 parts, grease one of them with two tbsp. l. sauce.
  • Place the filling in the middle of the flatbread, leaving some free space around the edges.
  • Raise the bottom of the pita bread to the top, while it should cover the middle of the filling.
  • Next, we bend the right edge of the cake towards the center, it completely covers the ingredients.
  • Fold the left edge of the pita bread towards the center and fold the bottom part of the shawarma over the top.

This method of wrapping ingredients in round pita bread is used not only in Central Asia, but also in Mexico, where burritos are also deftly rolled. This method helps to evenly cover all the layers with pita bread, and when eaten, the flatbread holds its shape well.

Step-by-step preparation

  1. How to wrap shawarma? Spread the round pita bread on a work surface. Visually divide it into 3 parts and place the layers in its lower third.
  2. Cover the side edges of the ingredients with pita bread and fold in the bottom free edge.
  3. Roll the pita bread into a roll, carefully moving from bottom to top, lightly pressing the filling with your hands.
  4. At the very end, the filling should be pressed down a little, and the edges of the flatbread should be tucked in so that the seam falls in the middle of the pita bread and holds well.
  5. Before serving, the shawarma needs to be fried a little.

How to do it?

First, place the cucumber slices in a colander and lightly sprinkle with salt. Make sure they are well mixed, then let the excess liquid drain into the sink for 10 minutes. Rinse, place on paper towels and dry gently.

Place a piece of pita bread on your work surface and spread some cream cheese evenly over it, leaving one of the short ends empty. Then layer the cucumber slices over the cream cheese.

How to wrap stuffed pita bread into a roll? Start twisting it by the short, filler-filled end. Roll it tightly, avoiding any air gaps. Using a sharp bread knife, cut the cucumber and cream cheese roll into 4 equal pieces. Serve immediately or store in the refrigerator for several hours.

Fried envelopes

How to wrap stuffed pita bread in an envelope? It's actually not difficult at all. As a filling you can use a combination of the following products:

  • tuna, cheese, salt and pepper;
  • potatoes and vegetable stew;
  • rice and curry sauce;
  • meat or fish and any other fillers.

For the sweet filling you can also use whatever you like. Sliced bananas with mango puree or sliced strawberries with cream are among the many combinations available. The rule is that the filling is not too dry or too watery (in both sweet and savory varieties).

Place a few spoons of your chosen filling in the middle of the pita bread. Now fold one edge down (the top one), then place some of the wet mixture on the right end and fold it to the left. Repeat on the opposite edge, then cover the bottom with the wet mixture and fold up. You should end up with a square-shaped package.

Now that you have folded the lavash envelope with the filling, place it with the seam side on the bottom of a heated frying pan with a small amount of oil and fry over low heat for four minutes on each side so that the cold filling warms up sufficiently.

Grate the cheese on the finest grater. The eggs are here by chance!!! I cooked several dishes at once!

Finely chop the dill, tear or chop the salad.

Cut the cucumber into strips, cut the carrots into strips too.

Place the lavash sheet on cling film or paper to make wrapping and storing in the refrigerator more convenient. We do not spread the sauce on the first sheet, but simply lay out the cheese.

Place a second sheet of pita bread, brush with half the sauce and sprinkle generously with dill and salad.

Place the third sheet of pita bread on top, brush with the second half of the sauce. Add carrots and cucumber.

With the help of film it is very easy to wrap the roll! Keep refrigerated. I prepare the appetizer the night before. And in the morning to nature!!! The roll will not leak thanks to the top layer of cheese!

You get a lot of rolls for a large company. We cut it into pieces already in nature. Or before serving to guests.

The cross-sectional view is appetizing!!! Everyone will definitely like this juicy roll with sauce!!!
