What do we need for the marinade?

  • coarse salt - 1/4 cup*;
  • sugar - 1 tbsp;
  • lemon - 1 piece;
  • bay leaf - 3 pcs.;
  • garlic - 8 cloves;
  • dried thyme - 1 tsp;
  • black peppercorns - 1 tsp;
  • ground hot red pepper - 0.5 tsp;
  • water - 1.5 liters;
  • chicken legs (legs, thighs or drumsticks) - 3 kg;
  • butter - 100 g;
  • fresh herbs - 1 bunch.

How to marinate chicken legs for barbecue

  1. Pour water into the pan. Squeeze lemon juice into it. Cut the garlic cloves into thin slices. We put all the ingredients into the water, except butter and herbs.

  2. Place on the fire, bring to a boil, cook for 5 minutes and turn off. Let cool.
  3. You need to soak the legs. It is better to make cuts on the chicken legs, then the marinade will penetrate well inside. Make a cut with a sharp knife. We only cut the skin, as shown in the photo below.

  4. Place the legs in a container large enough to hold all the marinade. Fill it up. The legs should be completely covered with liquid.

  5. Marinating time is at least 3 hours, overnight is possible.
