Vegetables and potatoes with pork in pots is a tasty and satisfying dish that is perfect for a family lunch or dinner.
It is prepared quickly, there are no numerous stages of preparation that tire all housewives.
Ingredients:
- pork - 500 g
- potatoes - 800 g
- onions - 1 pc.

- vegetable oil - 2-3 tbsp. l.
- bay leaf - 3-4 pcs.

Cooking method:
Before cooking pork in a pot with potatoes, wash the meat well; you should not cut off the existing fat, as it will later melt out during frying. Cut into small pieces.
Place the chopped meat in a frying pan, into which you first need to pour vegetable oil and heat it. Fry until golden brown, while lightly adding salt and pepper, literally a pinch at a time.
While the meat is roasting, you can do the vegetables. Peel the onions and carrots and chop them into small cubes.
Tomatoes also need to be cut into cubes, but not too finely. Whether or not to peel tomatoes is up to everyone to decide at their own discretion.
By this point, the meat will have time to fry well, transfer it from the frying pan to any bowl, or you can directly into the pots. And add onions and carrots to the frying pan, directly into the oil that remains after frying the meat. Fry them until softened.
During this time, you can have time to cut the peeled potatoes into cubes.
We begin to put all the prepared ingredients into pots. Place the fried meat at the very bottom, then the tomatoes.
Then add the fried vegetables, spices and bay leaf.
Add the potatoes last and add water. The amount of water will depend on the size of your pot. Just don’t pour it in to the very brim so that it doesn’t overflow from the pot during cooking. Salt the contents and send to bake.

Roast meat can be anything. It's easiest to cook with chicken or pork. Beef requires more aging because it remains tough without enough braising time. They make pot roast with lamb, turkey and rabbit. Today we will learn how to cook roast beef.
For 4 servings you will need:
- 6-8 pcs. potatoes;
- 250 g beef;
- 1 onion;
- 1 carrot;
- 0.5 cans of peas;

Before cooking, soak the beef a little, about 15-20 minutes. Then cut into pieces and place in a frying pan for frying. Lard or sunflower oil can be used as fat.
When the meat is browned, add the onions and carrots. After another ten minutes, remove the pan from the heat and place its contents in portions into the pots.
Peel and cut the potatoes. Add it to the meat. Sprinkle peas 2 tablespoons per pot. Salt and add pepper to all contents. Do not preheat the oven. Place the pots in it and set the temperature to 190°. Simmer for 50-55 minutes. Add greens at the end.

Cooking in pots couldn't be easier, and today we're going to make an amazing, delicious stir-fry with meat, mushrooms and vegetables. Therefore, we take out our little clay helpers and get down to business.

How to cook Pork Roast in Pots
Since I had dried mushrooms, the first thing I did was fill them with freshly boiled water and leave for half an hour. Cut the meat into medium cubes with a side of 2-3 centimeters. Place the chopped meat on the bottom of the pot, salt, pepper and add a piece of butter. Three carrots on a coarse grater, and cut the onion into small cubes and put them in pots. The next layer is mushrooms. Then add chopped garlic and pour in water so that the liquid fills the pot halfway. Stir and add salt if necessary. Place chopped potatoes on top. Cover the pots with lids and place in the oven. Set the temperature to 220 degrees and simmer our roast for about an hour to an hour and twenty minutes. We decorate the finished dish with fresh herbs and serve it to the table directly in the pot.

I will describe my step-by-step recipe for pot roast, which I have prepared many times, and my guests always liked it. This time I will cook pots at home for the New Year's table, the roast should be served after appetizers and various salads, so I will not add additional calories to it.
When I prepare this dish as a main dish for lunch, I always lightly fry the onions, carrots, and potatoes for satiety. But I don’t do this on holidays, I feel sorry for my guests, there are a lot of calories in fried potatoes. I will be preparing a delicious pot roast for six people for the holiday table, and before I get behind the stove, I will prepare all the ingredients I need:
- Pork (I buy meat at a company butcher shop, a piece of neck is 750-800 grams). I only buy pork; I don’t risk cooking a roast with beef; it might turn out to be tough meat, but that doesn’t happen with pork;
- Six potato tubers;
- One large carrot;
- Two medium onions;
- Freshly ground black pepper (I ask for it myself) one teaspoon;
- Six large cloves of garlic;
- Champignon mushrooms 500 grams
- Vegetable oil for frying mushrooms 4 tablespoons;
- Salt to taste.
Pot Roast Recipe | Cooking process
The recipe for roast in pots is very simple, as I already said, even the most inexperienced housewife can handle it, but I still decided to describe the recipe in detail, step by step.
- First of all, I thoroughly wash the champignons (it is advisable to buy small ones), then cut them in half and fry them in vegetable oil. I place the fried mushrooms on the bottom of the pots; they look beautiful in halves.
- I peel the onion and cut it into thin half rings, put it in five pots, and don’t put it in the sixth (I remember that my friend doesn’t eat onions). I peel the carrots, wash them and cut them into thin, beautiful strips, adding carrots to all the pots.
- I cut the pork into cubes, lightly salt it and put it in pots. I don’t forget to put a piece of chicken in one pot instead of pork; my husband doesn’t like pork.
- I peel the garlic, crush it with a press and put it in each pot. I sprinkle pepper into each serving (I ground it first).
- I peel the potatoes, cut them into small 3 cm squares and put them in pots, add a little salt. I pour a third of the pot of warm boiled water into each pot.
- I cover with lids (if there are no lids, you can quickly make them from dough; you can buy any dough in the store). Now we place the pots on a baking sheet and put them in the oven for 60 minutes, setting the temperature to 190-200 degrees.
If you can’t decide on the time, then after 45 minutes, open one pot in the oven and test to see if the dish is ready. Make sure that the aroma from the oven doesn’t intoxicate you, now you know exactly how to cook pot roast at home.
Delicious pork with mushrooms and potatoes in a pot (without frying)
As a rule, champignons are used to prepare the dish. But if you are lucky and you find yourself in the mushroom season, use white mushrooms, boletus, honey mushrooms, and chanterelles, giving the roast an incomparable aroma of forest gifts. In autumn it’s delicious to bake pork with dried porcini mushrooms.
Take:
- Pork meat – 500 gr.
- Champignons (wild mushrooms) – 200 gr.
- Sour cream, full fat – 100 ml.
- Potatoes – 600 gr.
- Onion – 2 heads.
- Big carrot.
- Tomato paste – 4 tablespoons.
- Water – ½ cup.
- Salt, any seasonings.
How to cook:
- Divide the tenderloin into small pieces. Chop the mushrooms into slices. Rub the carrots with coarse shavings. Cut the potato tubers into cubes the size of the meat slices.
- Place the ingredients in pots in layers, distributing them in equal quantities according to the number of servings.
- The alternation of layers is as follows: meat, seasonings, salt. Then comes the carrot and onion layer.
- Next, distribute the potatoes and mushrooms among the containers.
- Mix water with sour cream and tomato, pour into pots. Cover with a lid and bake. The temperature in the oven is 200 o C. Set the timer for 1.5 hours and be patient.
Recipe 4: Pot roast with meat and potatoes in tomato sauce
This One Pot Roast with Meat and Potatoes requires fresh tomatoes. But if they are not there, then replace them with tomato paste, ketchup, or any red sauce.
Preparation:
1. Cut the peeled onion into cubes and fry for two minutes.
2. Add chopped garlic. Number of cloves to your taste. If you don’t like garlic, then you don’t have to put it in at all. Let's fry together for another minute.
3. Wipe the tomatoes, remove the skin and put the mixture into the frying pan. If you use tomato paste, then add 70-80 grams of water or broth per 3 spoons. Simmer the sauce for 5 minutes.
4. While the vegetables are cooking, cut the meat into cubes and peel the potatoes. We cut it like beef.
5. Take another frying pan, lightly fry the beef, remove the pieces and fry the potatoes. If you have a large frying pan, you can fry everything together at once, but make the fire high so that the food does not release juice.
6. Place the meat and potatoes in pots, add water so that it takes up a third of the container’s volume. Salt and pepper. Spread tomato sauce on top and you're done!
7. All you have to do is bake the roast for 1.5 hours in the oven and you can call it to the table!
How to deliciously bake pork in pots with sour cream
Sour cream makes any product tender, with a creamy taste. The recipe calls for bell pepper. It can be removed or replaced with other vegetables.
We take:
- Pork – 500 gr.
- Sour cream 20% - 200 ml.
- Large onion.
- Potatoes – 1 kg.
- Carrot.
- Bell pepper.
- Greens - several branches.
- Salt, pepper, bay leaf, seasonings for pork.
Preparation:
- Cut the meat tenderloin and place it in a bowl. Pour in sour cream. Don’t add it all, leave a little for pouring over the top of the dish.
- Add seasonings and add a little salt. Leave for half an hour or an hour to marinate the meat.
- Chop the onion into half rings and grate the carrots on a large mesh grater. Remove the seeds and membranes from the pepper and cut into small cubes. Roughly chop the potatoes.
- When placing food in pots, start with meat, then add onions, carrots, and peppers one by one. Cover the dish with a layer of potatoes.
- Add water so that it covers the ingredients but does not reach the potato layer.
- Coat the top with the remaining sour cream and sprinkle with herbs. Place the roast in a cold oven and set it to 200 o C. Baking time for the dish is 1.5 hours.
Recipe for potatoes with meat and cheese in pots
Cheese is appropriate for any baking of food in the oven. By creating a crust on top of the pot, it will retain all the juices, and the pork will stew almost in its own juice.
Ingredients:
- Pork (ribs, tenderloin) – 400 gr.
- Potatoes – 7-8 tubers.
- Large onion.
- Carrot.
- Cheese, hard – 50 gr.
- Salt, seasonings.
How to cook:
- Cut the meat into pieces, if they are ribs, then chop them. Place in a bowl, add seasonings and add salt. Stir.
- Heat oil in a frying pan and fry the slices over high heat.
- Separately, fry the onion and carrots, chopped into half rings.
- Place meat pieces on the bottom of the pot, cover them with fried vegetables. Place potatoes on top.
- Add 100 ml to each container. water.
- Place on the middle level of the oven, preheated to 180-200 o C.
- Set the timer for 40 minutes. When the signal sounds, take out the dish and sprinkle grated cheese into the pots. Return to the oven and cook for another 5-10 minutes until a crust appears.
Recipe 1: Home-style pot roast with meat and potatoes
A hearty winter dish. For pot roast with meat and potatoes, we use pork, lamb or beef.
Ingredients
- 700 grams of meat;
- 2 onions;
- 1 carrot;
- 800 grams of potatoes;
- 2 cloves of garlic;
- 2 bay leaves;
- a little oil;
- spices.
Preparation
1. Cut the meat into cubes, fry until lightly browned in well-heated oil.
2. Shred the carrots and cut the onions randomly.
3. Peel the potatoes and cut them into cubes.

5. Add peppercorns, salt, and place a piece of bay leaf on top. You don’t need to put a lot, you shouldn’t drown it in a dish either, so that the roast doesn’t become bitter.
6. Pour half the water and cover.
7. Place in the oven for an hour, temperature 180-190. Then turn it off, add a little chopped garlic on top of each pot, cover and leave in the hot oven for another half hour.
Roast pork with potatoes in sauce

- Sour cream - 4 tbsp. l.
- Mayonnaise - 4 tbsp. l.
- Milk - 1.5 tbsp. l.
- Greens (parsley, cilantro, dill - optional and to taste) - 1 bunch.
Recipe for Roast Pork with Potatoes in Sauce:
Prepare the ingredients: 1. Cut the pork into small pieces. Add chopped onions to the pork, one and a half tbsp. tablespoons of vegetable oil (I used a mix of sunflower and olive “IDEAL”), salt and ground black pepper to taste (I added a mixture of peppers). Mix everything. 2. Peel and cut the potatoes into small cubes (you can use a special grater). 3. Grate the cheese. 4. Chop the greens (I used cilantro + dill)
Rinse the pots with cold water, or even better, place the pots in a wide saucepan or basin and fill them with water, leaving for 10-15 minutes. The pots are not wiped afterwards. Place the pork in the prepared pots, add potatoes on top, and add a little salt. Add 1/2 teaspoon of butter to each pot (no need to melt). Sprinkle with cheese.
Prepare the sauce. To do this, mix sour cream, mayonnaise, milk and herbs in a separate pan. Place on the stove and bring the sauce to a boil. Pour the sauce over the contents of the pots. p.s. if you have a negative attitude towards mayonnaise, then replace it completely with sour cream
Place the pots in the oven (do NOT preheat!!!). It is better to place the pots on a baking sheet. Cover the pots with lids. Turn on the oven at 180-200 degrees. Cook for approximately 40 minutes (depending on the oven), remove the lid 10-15 minutes before the end of cooking.
Roast pork with potatoes in sauce is ready. Note: Hot pots should not be placed on a cold or damp surface, otherwise the pots may crack. Therefore, after taking them out of the oven, let the pots stand for a little while on the same baking sheet on which they were prepared.

This recipe can be used as a base for adding different vegetables to the meat, using what is currently in the refrigerator. The ingredients can be pre-fried, or added raw.

- Instead of frozen green beans, you can soak and boil some dry beans in advance, or open canned ones. However, it is worth considering that with green beans, the dish turns out tastier and more attractive in appearance;
- The oven needs to be preheated in advance, set to approximately 180C;
- Clean the meat from tendons, films and bones. Cut the slightly frozen pulp into thin slices, mix with chopped potatoes, salt well and sprinkle with spices;
- In another bowl, mix the beans, you don’t even need to defrost them, add chopped carrots;
- Prepare the sauce - squeeze garlic into the tomato base, add finely chopped onion, fresh or dry herbs and spices;
- Add meat and potatoes to the bottom of the pot, soak them with a small amount of sauce. Add beans and carrots on top, pour the remaining sauce over everything and close the lid and place in the oven. Bake until done, about 45 minutes.
