Good afternoon dear readers. In this selection you will find amazing salads prepared with chicken meat. I think it won’t be big news for many that chicken goes quite well with a huge number of foods. And besides, it is very tasty and not expensive.

The New Year's bustle is about to arrive and many housewives will begin to create their delicious masterpieces in the kitchens. And to reduce your time a little while searching for recipes for delicious chicken salads, I will publish them in one place. Festive chicken salad with prunes and walnuts

I can’t say that the salad is quite new, but it has not lost its relevance. It is called differently in different places. Some will know it as “Ladies' Caprice”, some as “Marseille”, but no matter what it is called, the taste does not change.

Ingredients:

  • chicken fillet 500-600 gr.
  • hard cheese 200 gr.
  • prunes 100 gr.
  • Korean carrots 350 gr.
  • walnut grains 50 gr.
  • eggs 6 pcs.
  • mayonnaise
  • garlic, salt and pepper to taste

Cooking process:

Since we need the meat boiled, we’ll start by putting the breast on to boil. Next, take the prunes, rinse them and soak them in warm water for 20-30 minutes. Also set the eggs to boil. After the prunes are well soaked in water, cut them into small squares. Separate the boiled meat into fibers and chop the eggs. Cut the yolks separately from the whites.

The walnut grains will need to be lightly dried in a dry frying pan or in the oven, then chopped and mixed with Korean carrots.

Next, you can start assembling the salad. We lay the layers in the following sequence.

  • prunes
  • chicken meat
  • carrots with nuts
  • grated cheese
  • egg whites
  • egg yolks

Be sure to grease each layer with mayonnaise. After adding protein, the salad needs to be coated with mayonnaise not only on top, but also on the sides. This is necessary so that the yolks stick well to the sides. Afterwards, you need to put this masterpiece in the refrigerator for 2-3 hours so that the layers are well saturated.

Chicken in the oven on a bottle

There are many options for cooking whole chicken in the oven, this recipe is the most interesting of all, the chicken turns out with a crispy crust and an amazing aroma if you bake it on a bottle of beer. Beer can be replaced with white wine, but the aroma and taste will be slightly different.

Chicken in the oven on a bottle

Ingredients:

  • chicken – 1 pc. by 2-2.5 kg;
  • beer – 1 bottle (0.5 l.);
  • mayonnaise – 2-3 tbsp. l.;
  • salt, ground black pepper to taste.

Preparation:

  • Preparing the chicken. Wash it well, cut off pieces of fat where necessary and remove remaining feathers. Dry on a paper towel.
  • Rub the dried chicken with salt and ground black pepper. We try not to oversalt, remembering that we will also be grating with mayonnaise, which also has its own salt.
  • Open a bottle of beer and pour a quarter of the contents into a separate container.
  • We place the chicken on the bottle and fasten the neck with a toothpick.

  • Rub mayonnaise all over the perimeter.
  • Turn on the oven at 200°C.
  • Let the chicken bake for 30 minutes.

  • Mix the remaining beer with spices.
  • We take the chicken out of the oven after half an hour and pour beer mixed with spices over it.
  • Place in the oven again for 40 minutes.
  • We check the chicken for doneness by piercing it with a knife in the leg area or under the wing. If necessary, finish baking.
  • Serve hot. You can serve it whole, or you can immediately cut it into portions for convenience. Bon appetit!

Classic bride salad with chicken for the New Year's table

I will give you a classic cooking recipe because, in my opinion, it is one of the most successful. It is prepared in the classic way from boiled meat, but if you want, you can try it from smoked meat.

Ingredients:

  • chicken fillet 400 gr.
  • eggs 4 pcs.
  • potatoes 2-3 pcs.
  • onion 1 head
  • processed cheese 2 pcs.
  • vinegar 1 tbsp. spoon
  • water 100 ml.
  • mayonnaise 250-300 gr.

Cooking process:

So let's start with preparing the ingredients. Cook the eggs, jacket potatoes and meat until done. Peel the onion into small cubes, pour 100 ml. warm water and one spoon of table vinegar. Keep in this marinade for about 20 minutes.

Next, let's grate the potatoes, cheese and eggs, but chop the meat into small strips. Chop the egg whites separately from the yolks.

Lay out the salad in layers in the following order:

  • chicken
  • onion
  • potato
  • yolks
  • cheese
  • proteins.

Coat each layer with mayonnaise. If desired, you can add salt and pepper to taste. After assembly, the dish should sit in the refrigerator for 1-2 hours.

Mushroom clearing salad recipe with champignons for New Year 2020

This treat is quite easy to prepare, but there is one little secret. At the end, you will need to turn the salad over so that the mushrooms are on top.

Ingredients:

  • chicken fillet 300 gr
  • eggs 4 pcs.
  • potatoes 3-4 pcs.
  • marinated champignons 400 gr.
  • carrots 1 pc.
  • vegetable oil 1-2 tablespoons
  • mayonnaise
  • greens for decoration
  • salt and pepper to taste

Cooking process:

Boil the chicken breast in lightly salted water until tender. You also need to boil the eggs and potatoes until ready. Boil the potatoes in their skins.

We assemble the salad in a collapsible pastry ring, or a salad bowl with high sides. The bottom and sides need to be greased with vegetable oil so that upon completion of assembly the salad will be easier to remove from the mold. Carefully place the mushrooms, caps down, on the bottom of the plate.

Wash the dill, chop finely and sprinkle on the mushrooms.

The next layer will be boiled potatoes passed through a grater. After the potatoes, add a thin layer of mayonnaise.

Next is a layer of grated carrots and mayonnaise again. If desired, you can add finely chopped garlic to the carrots; 2-3 cloves will be enough.

Then finely chop the eggs and spread them in an even layer.

Finally there is a layer of chicken meat.

Now take a large dish, cover the salad and carefully turn it over so that the mushrooms are on top.

This is the beauty you should end up with. An excellent decoration for the New Year's table.

Many people have cooked the whole chicken in the oven, but we often use the recipes of our mothers and grandmothers. If you want chicken with a crispy crust and citrus notes, then cook it with apples and oranges according to our recipe. The meat turns out tender, melting in your mouth with a surprisingly tasty crust. This dish is definitely worth preparing and delighting your guests for the holiday!

Chicken in the oven with apples and oranges

Ingredients:

  • whole chicken – 1 pc. by 2-2.5 kg;
  • apple – 1 pc.;
  • orange – 1 pc.;
  • garlic – 2-3 cloves;
  • mustard – 2 tsp;
  • ground ginger - to taste;
  • soy sauce – 1 tbsp. l.;
  • sharp adjika - on the tip of a knife;
  • spice mix for meat – 1 tsp;
  • dried rosemary – 0.5 tsp;
  • butter – 40 g;
  • vegetable oil – 1 tbsp. l.;
  • salt, ground black pepper - to taste.

Preparation:

  1. Wash the chicken well under running water and dry it on a paper towel.
  2. Trim off excess fat, tail and excess skin on the neck. If necessary, remove remaining feathers.
  3. Using a tablespoon, lift the skin on the breast.
  4. The recipe requires coarse salt. Rub it around the entire perimeter of the carcass and under the skin.
  5. Let's start preparing the marinade, this is where the whole secret lies. In a bowl, mix mustard, ground ginger, adjika, rosemary, pressed garlic, meat seasoning, soy sauce, vegetable oil, salt and pepper.
  6. Rub the prepared marinade all over the carcass, under the skin on the breast and inside. Leave to marinate for 2-3 hours.
  7. Wash apples and oranges thoroughly under the tap and cut into large slices. Remove the center and stems from the apple.
  8. Grease a baking dish for chicken with butter and place the chicken in it.
  9. Place small pieces of butter under the skin of the breast. This way the breast will not dry out, and the meat will remain juicy and soft.
  10. Place chopped apples and oranges inside the carcass. Sew with thick thread or fasten with toothpicks.
  11. To prevent the legs from burning and drying out, we tie them together with threads.
  12. We make cuts in the sides of the carcass with a knife in the form of pockets and put the wings in them.
  13. Pour some water into the baking container.
  14. Turn on the oven at 190 degrees and wait until it warms up well.
  15. Place the chicken carcass in the preheated oven.
  16. Bake for 40 minutes, then remove.
  17. Pour the juice over the chicken and turn it over. Let's bake again.
  18. Bake like this for another half hour.
  19. We take it out again and pour the juice over it; there is no need to turn it over.
  20. Bake for another 10 minutes until crispy and golden brown.
  21. We take it out and turn it over again, bake again for another 10 minutes so that the same golden crust appears on the back side.
  22. Serve hot on a large, beautiful platter. Bon appetit!

The baking time for chicken depends on its size, so monitor the time yourself and increase or decrease it if necessary.

Advice!

We recommend marinating the chicken in advance, preferably leaving it in the marinade overnight.

Salad for the New Year 2020 - chicken with pineapples and mushrooms

Thanks to the fact that it contains pineapples, the salad turns out very juicy and tasty. Ideal for any holiday, and especially for New Year's gatherings.

Ingredients:

  • chicken breast or just chicken meat 300 gr.
  • hard cheese 300 gr.
  • eggs 4 pcs.
  • champignons 400 gr.
  • onion 1 head
  • fresh cucumber 1 pc.
  • fresh pineapple 1 pc.
  • mayonnaise or sour cream
  • greens for decoration

Cooking process:

Boil the breast and chop finely, fry the champignons with onions, boil the eggs and chop finely. Cucumber and pineapple are also finely chopped using a sharp kitchen knife.

Next, layer the ingredients:

  • chicken meat
  • cucumber
  • mushrooms
  • potato
  • cheese
  • a pineapple
  • eggs

At the end, decorate the salad with finely chopped dill and fried mushrooms. As you can see, the recipe is really simple. But the taste and aroma of this salad will really amaze you.
