Blue whiting has a specific smell, but it is not unpleasant. If the fish gives off a repulsive odor during frying, it is most likely spoiled. Its taste will disappoint you, and its use can cause poisoning. In order to avoid such trouble, carefully examine the product before purchasing. You need to make sure that the product’s expiration date has not expired and that the packaging is not damaged. It is not recommended to purchase fish whose carcasses are damaged and covered in spots. Another reason to refuse the purchase may be the presence of snow, ice and water in the bag of fish, as this is a sign of improper storage of the product. Blue whiting needs to be defrosted in natural conditions, without exposing it to sudden temperature changes. To do this, it needs to be given the opportunity to thaw in the main chamber of the refrigerator or at least at room temperature. Trying to speed up the process using a microwave or warm water will cause the fish to lose a lot of moisture, become dry and less tasty. To ensure that whiting remains juicy when frying, it is first coated with batter or breading. Fry it over medium heat. Before placing fish in a frying pan, it must be heated. It’s better not to skimp on oil so that carcasses or pieces don’t stick to the bottom

Usually the carcasses of this fish are small. It is enough to fry them for 15 minutes, turning them every 3 minutes so that they do not burn. If you fry whiting fillet (with or without batter), the cooking time should be reduced by 1.5-2 times.

Blue whiting fried in batter


Compound:

  • blue whiting – 1 kg;
  • chicken egg – 2 pcs.;
  • mayonnaise – 50 g;
  • water – 40-60 ml;
  • wheat flour – 100 g;
  • salt, ground black pepper - to taste;
  • refined vegetable oil - how much will be needed.

Cooking method:

  • Gut the fish and fillet it. The fillet layers can be left whole, or cut in half or into 3 parts.
  • Break the eggs into a bowl, add salt, pepper and mayonnaise. Whisk the ingredients.
  • Add flour. Stir thoroughly so that no flour lumps remain in the mixture. By adding cool boiled water and whisking, bring the consistency of the dough to the desired thickness. It should resemble sour cream.
  • Heat vegetable oil in a frying pan.
  • Dip the fish pieces into the batter and place in boiling oil. Fry for 3-4 minutes on each side until the dough is completely browned.
  • Place the batter-fried whiting on a napkin to absorb excess oil.

Blue whiting in batter can also be accompanied by a side dish, but more often it is still served separately. This appetizer is well suited for a buffet table.

Blue whiting in the oven with potatoes


The blue whiting baked in the oven with potatoes according to the following recipe is moderately spicy, nutritious and aromatic. If desired, mayonnaise can be replaced with a mixture of sour cream, salt, pepper and grated garlic. The resulting dish is an excellent option for a homemade lunch or dinner, making 4 servings in no more than 50 minutes. Ingredients: whiting – 500 g; potatoes – 500 g; onion – 100 g; spices for fish - ½ teaspoon; mayonnaise – 5 tbsp. spoon; salt, pepper, oil. Prepare the fish and rub with seasonings. Peel the potatoes, cut into circles and place in an oiled pan. Place fish and chopped onions on top, cover everything with mayonnaise. Bake blue whiting in the oven with potatoes for 30 minutes at 200 degrees.

Fish in sour cream sauce

This will turn out to be stewed blue whiting. To prepare it, first the cut carcasses are salted, peppered and put into the bottom of the refrigerator for about twenty minutes. Then each one is dipped in beaten egg, breaded in breadcrumbs and fried, not in vegetable oil, but in butter. When the whiting fish is browned, it is poured with sour cream at the rate of a third of a glass per half a kilo of fish. When it boils, turn it off after about seven minutes. In another frying pan, fry half a kilo of potatoes with finely chopped onions. Place both dishes into plates, add pickles and sprinkle with dill and parsley.
